2-in-1: Protein Muffins OR Protein Pancakes

  • Cooking Time 20 minutes

Ingredients

  • 1 banana
  • 1 scoop protein powder
  • ½ cup egg whites or 1 whisked egg
  • 1/4 teaspoon baking powder

Instructions

  1. Mash banana in bowl with fork
  2. Add protein powder, baking powder, and egg whites/whisked egg to bowl
  3. mix until batter is smooth
  4. For muffins
  5. ■ Preheat oven to 400˚F
  6. ■ Pour batter into greased cupcake tin
  7. ■ Bake for 15-20 minutes
  8. ■ Enjoy in a hammock!
  9. For pancakes
  10. ■ Heat a greased skillet over medium heat
  11. ■ Pour batter onto skillet
  12. ■ Flip pancakes when bubbles appear in the middle and edges start to lift
  13. ■ Enjoy in a hammock!
