Chicken Rice (a Lebanese staple)
- Prep Time 10 Minutes
- Cooking Time 30 minutes
- Total Time 40 Minutes
- Serves 1 People
Ingredients
- 1 rotisserie chicken
- 1 cup rice
- ⅓ cup pine nuts
- ½ teaspoon of olive oil
- 1½ teaspoons of allspice *
- 1 teaspoon salt plus a sprinkle
- 2 cups of chicken broth or water
Instructions
- Rinse rice until rinsing clear
- Combine rice with the chicken broth/water in a pot over medium-high hea
- ○ Once this combination has come to a boil, cover the pot
- ○ Turn the heat down to low and simmer for 20 minutes
- Meanwhile, strip all the meat off the rotisserie chicken and set aside
- Heat the olive oil in a skillet and add the pine nuts
- ○ Add optional sprinkle of salt
- ○ Sautee the pine nuts until they’re light brown (not burnt!)
- When the rice is done cooking, add chicken, pine nuts, allspice, and salt to the pot
- Enjoy with tzatziki or by itself!
Notes
*You can make your own allspice – combine equal parts cinnamon, cloves, and nutmeg
● Use microwavable rice to cut down on cook time
● Watch pine nuts closely!
● Tzatziki can be homemade as well (plain yogurt, diced cucumbers, clove of garlic, dried mint)
