Chicken Rice (a Lebanese staple)

  • Serves 1 People

Ingredients

  • 1 rotisserie chicken
  • 1 cup rice
  • ⅓ cup pine nuts
  • ½ teaspoon of olive oil
  • 1½ teaspoons of allspice *
  • 1 teaspoon salt plus a sprinkle
  • 2 cups of chicken broth or water

Instructions

  1. Rinse rice until rinsing clear
  2. Combine rice with the chicken broth/water in a pot over medium-high hea
  3. ○ Once this combination has come to a boil, cover the pot
  4. ○ Turn the heat down to low and simmer for 20 minutes
  5. Meanwhile, strip all the meat off the rotisserie chicken and set aside
  6. Heat the olive oil in a skillet and add the pine nuts
  7. ○ Add optional sprinkle of salt
  8. ○ Sautee the pine nuts until they’re light brown (not burnt!)
  9. When the rice is done cooking, add chicken, pine nuts, allspice, and salt to the pot
  10. Enjoy with tzatziki or by itself!

Notes

*You can make your own allspice – combine equal parts cinnamon, cloves, and nutmeg

● Use microwavable rice to cut down on cook time
● Watch pine nuts closely!
● Tzatziki can be homemade as well (plain yogurt, diced cucumbers, clove of garlic, dried mint)
