Foil Cod

Ingredients
- 1 pound cod filets
- 1 bell pepper
- 1 large carrot
- Olive oil
- White wine*
- Garlic, minced
- Ginger, grated or minced
- Salt
- Optional butter
Instructions
- Preheat oven to 350˚F
- Julienne (cut into strips) carrots & bell peppers
- Salt the cod
- Create foil boats to fit cod filet and to hold the liquid (make sure they’re bigenough to close completely!
- Layer veggies then cod in the foil boat
- Drizzle olive oil & white wine onto cod
- Add garlic & ginger
- Add optional pad of butter
- Seal the foil very tightly!
- Cook for 15 minutes
- Enjoy in a hammock!
Notes
Make sure your foil boats are wrapped extra, extra tight – this is what cooks the fish
*If you don’t have access to white wine, use chicken broth
