Foil Cod

  • Prep Time 20 Minutes
  • Cooking Time 15 minutes
  • Total Time 35 Minutes
  • Serves 4 People

Ingredients

  • 1 pound cod filets
  • 1 bell pepper
  • 1 large carrot
  • Olive oil
  • White wine*
  • Garlic, minced
  • Ginger, grated or minced
  • Salt
  • Optional butter

Instructions

  1. Preheat oven to 350˚F
  2. Julienne (cut into strips) carrots & bell peppers
  3. Salt the cod
  4. Create foil boats to fit cod filet and to hold the liquid (make sure they’re bigenough to close completely!
  5. Layer veggies then cod in the foil boat
  6. Drizzle olive oil & white wine onto cod
  7. Add garlic & ginger
  8. Add optional pad of butter
  9. Seal the foil very tightly!
  10. Cook for 15 minutes
  11. Enjoy in a hammock!

Notes

Make sure your foil boats are wrapped extra, extra tight – this is what cooks the fish

*If you don’t have access to white wine, use chicken broth
